A Jerk Chicken Recipe That is Light and Delicious!

Ingredients

This Jerk Chicken recipe makes 4 servings.

  • 1/4 cup (2 fluid ounces) dry red wine
  • 1/2 medium jalapeno pepper, seeded and minced
  • 2 tablespoons minced scallions
  • 1 tablespoon + 1 teaspoon vegetable oil
  • 1 tablespoon ground allspice
  • 1 garlic clove, minced
  • 1 1/2 teaspoons ground coriander
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon low-sodium soy sauce
  • 1/4 teaspoon nutmeg
  • Four 4-ounce skinless boneless chicken breasts

Cooking Instructions

  1. In small bowl, combine wine, jalapeno pepper, scallions, oil, allspice, garlic, coriander, cinnamon, soy sauce and nutmeg, mixing to form a paste.
  2. Rub chicken evenly with seasoning paste.
  3. Refrigerate, covered, AT LEAST 8 HOURS or overnight.
  4. Preheat broiler. Broil chicken 6" from heat, 3 1/2 minutes on each side, until cooked through.
