Two-Seed Multi-grain Bread

Ingredients:

  • 1 Tablespoon whole wheat flour
  • 1 Tablespoon unbleached flour
  • 1 Tablespoon sesame seeds
  • 1 Tablespoon corn meal
  • 1/2 teaspoon baking powder
  • 2 eggs, separated
  • 1 packet or 1 teaspoon of stevia
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon onion powder
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 2 tablespoons of low-fat ricotta cheese
  • 1/8 teaspoon cream of tartar
  • 1 tablespoon flax seeds

To Prepare:

Preheat oven at 350 degrees

Mix flours, cornmeal, sesame seeds and baking powder together. Beat in the egg yolks. Set the egg whites aside. Sprinkle with stevia, sea salt and onion powder.

Now mix the ricotta cheese and butter together. Add the dry ingredients to the butter and cheese mixture and blend well.

Beat the egg whites and the cream of tartar together until stiff. Fold gently into dough mixture.

Spoon the dough mixture into a small non-stick or lightly oiled loaf pan. Sprinkle with the flax seeds and bake at 350 degrees for 45-50 minutes.

Cool loaf on a wire rack for about 15 minutes before slicing.
