A Refreshing Raw Vegetable Juice Recipe!

Beta Carotene Vegetable Juice

This delicious raw vegetable juice recipe makes one serving.

3 broccoli florets with stems

4 carrots

2 red apples

Wash produce thoroughly. Cut apples into wedges. Slice broccoli florets into halves.

Process all ingredients in the juicer. Serve immediately.

Lettuce is wonderful for juicing, as it is abundant in provitamin A, vitamin C, silicon and chlorophyll. Always use garden-variety lettuces like Boston, Bib, green or red-leaf, Romaine, etc.

Head lettuce should never be used, because it has almost no nutritional value at all.

Broccoli is rich in bioflavonoids and other plant chemicals that help to protect our bodies from cancer.

Carrots make a superb juice, and are rich in beta carotene, which is converted to vitamin A in the body. This root vegetable is also plentiful in antioxidants and minerals.

Apples contain vitamin C and most of the B complex. They are also abundant in many minerals--including phosphorus, calcium, magnesium and potassium.

Both apples and carrots are desirable juicing ingredients, because they add sweetness to fresh green juices, making them more palatable.

However, if you have blood sugar problems, you'll want to stick to vegetable-based juices or use only half an apple or a single carrot in your juicing recipes.
