A Tasty and Refreshing Vegetable Juice Recipe!

Green Rush

1/4 beet with greens (2 to 3 leaves with stems)

2 handfuls spinach

8 lettuce leaves

1 collard green leaf

4 carrots

1/2 red apple


Wash produce thoroughly. Process in juicer. Serve immediately. Recipe makes one serving.

Beets Beets are excellent for building the blood. They are a good source of iron. Beets also contain calcium, sulfur, potassium, chlorine, manganese and vitamin C. This great veggie also helps to flush the liver and kidneys, and stimulates the lymph glands.

Spinach, also a blood builder, is a rich source of provitamin A, iron and vitamin C. Some experts say that this vegetable actually helps to cleanse and regenerate the intestinal tract, while promoting regularity. Spinach also has more protein content than most other leafy greens.

Lettuce Garden-variety leaf lettuce is abundant in provitamin A, vitamin C, silicon and chlorophyll. Examples of such lettuces are Romaine, green or red-leaf, Boston, Bibb, etc. Never use head lettuce, because it contains almost no nutritional value at all.

Collard greens are rich in calcium. They are also a good source of vitamins B1(Thiamine), B2 (Riboflavin), Folic Acid, and vitamin C. Carrots Carrots are abundant in beta carotene, which is converted to vitamin A in the body. This bright orange veggie is also plentiful in antioxidants and minerals.

Apples contain vitamin C and most of the B complex. This fruit also contains many minerals, including phosphorus, calcium, magnesium and potassium.
