Cabbage is packed with vitamin C. It's also a good source of beta carotene and sulfur, an element that experts say aids in building healthy cartilage, bones and teeth. Celery is rich in organic sodium. So it makes a great drink when working out. Just juice it with an apple or two, to help balance the bitter taste of the leaves. Studies suggest that celery juice is also effective at easing the symptoms of rheumatoid arthritis, a painful and disabling inflammation of the joints; and urethritis, a urinary inflammation that makes urination painful or difficult. Lettuce is abundant in provitamin A, vitamin C, silicon and chlorophyll. Always buy garden-variety lettuces like Boston, Bib, green or red-leaf, Romaine, etc. Head lettuce should never be used, because it has almost no nutritional value at all. Carrots are rich in beta carotene, which is converted to vitamin A in the body. This root vegetable is also plentiful in antioxidants and minerals. Apples contain vitamin C and most of the B complex. They are also abundant in many minerals--including phosphorus, calcium, magnesium and potassium. Enjoy!
