A Waldorf Salad Recipe with a Twist!

Waldorf Salad Recipe

The original Waldorf salad is said to have been created back in the early 1890s by Oscar Tschirky, then dining manager of New York's famous Waldorf Hotel.

However, Tschirky's version didn't include the walnuts, which in my opinion are a must! I also love to add sliced red grapes to this delightful salad.

Makes 4 servings

Ingredients

  • 4 small red Delicious apples, cored, quartered and thinly sliced lengthwise
  • 1 cup ripe red grapes
  • 1/3 cup + 2 teaspoons fresh lemon juice
  • 1/2 cup nonfat sour cream
  • 3 tablespoons half-and-half
  • 2 tablespoons + 2 teaspoons light miracle whip (or your favorite reduced-calorie mayonaise)
  • 1/2 teaspoon freshly ground black pepper
  • 9 ounces skinless boneless smoked turkey breast, cut into 1/2" cubes
  • 1 cup coarsely chopped celery
  • 4 cups torn curly leaf lettuce (bite-size pieces)
  • 1 ounce shelled walnuts, finely chopped

Preparation Instructions

  1. In medium bowl, combine apples and 1/4 cup of the juice, tossing to coat.
  2. Drain, discarding liquid; set aside.
  3. In large bowl, with wire whisk, combine sour cream, half-and-half, mayonnaise, pepper and remaining 2 tablespoons juice.
  4. Add turkey, celery, grapes and apples; toss to coat.
  5. Line serving platter with lettuce. Mound turkey mixture in center of green leaf and red leaf lettuce-lined platter; spinkle evenly with walnuts.
